Honey Mustard Pretzel Chicken

     Today, I decided to try another Pinterest-inspired recipe. I can't believe I never thought of something like this before! Doesn't everyone love those little honey mustard pretzel bites? Doesn't everyone love chicken? Clearly, they're a match made in heaven!  There are a few versions of this floating around on there, but they all seem way too time-consuming. Luckily, I'm here to simplify things. So instead of making breading out of 10 ingredients, I've narrowed it down to 3 and instead of a dipping sauce that's mostly mayonnaise, I made a much healthier version of honey mustard that you can use for other things (like sandwiches, chicken nuggets, fries, etc.) if you have extra.

INGREDIENTS:
4 boneless chicken breasts
1 cup of honey mustard pretzel bites
1 cup breadcrumbs
2 tablespoons flour
2 6oz containers of plain Greek yogurt 
4 tablespoons regular yellow mustard
4 tablespoons honey

DIRECTIONS:
1. Preheat oven to 400 and grease the bottom of a glass baking dish.
2. Make the sauce first: In a small bowl, mix the yogurt, mustard, and honey. Take 1/2 of this sauce and put it in a separate bowl to coat the raw chicken. Put the other half in the fridge until you're ready to serve and use it as a topping.

 3. Now the fun part: Smash the pretzel pieces as small as you can. If you need some exercise, take a meat mallet to them. Using a food processor would be a less strenuous option. Then, mix the breadcrumbs in with the pieces.

 4. Spread the flour out on a plate, and line up that, one of the bowls of honey mustard, and the pretzel mixture.
5. First, lightly coat each piece of chicken in the flour. Then, dip it in honey mustard and let the excess drip off. Last, coat both side of the chicken in the pretzel mixture.

 6. Bake for 30-40 minutes, depending on the size of the chicken. Serve with the extra honey mustard that didn't come into contact with the raw chicken. Hopefully that goes without saying but you never know.

Have fun with this...both eating and cooking it! I don't know if it's just me, but smashing pretzels is really amusing! Come back tomorrow for 10 minute apple pie!
