Refreshing Corn Salad

     Hold onto your proverbial hats everyone! Today I'm posting my healthiest recipe so far, and it's actually really good. This salad is full of goodies and makes a perfect side dish to any mexican meal. It proves that there are more options than just rice and beans. The best part is that you can prepare this little burst of summer flavors in less than 15 minutes!

INGREDIENTS:
1 regular sized bag of frozen corn
1 12oz can of black beans
1 avocado
1 large tomato
1 green onion
1/2 red bell pepper
juice of 1 lime
1/4 cup fresh cilantro

DIRECTIONS:

First of all, this ingredient list is just a guideline. How much you add of each thing depends on the size of your vegetables and which ones you like more or less of. Just eyeball it.

1. Steam your frozen corn in the microwave for 5-7 minutes. Then drain it and run cold water over it for a minute.
2. Drain and rinse the beans. Then mix them with the corn in a large bowl.
3. Chop all of the veggies and cut the lime in half. The red pepper, tomatoes, and avocado pieces can be roughly the same size.
4. Mix everything else into the corn bowl, just make sure to add the avocado last. (They don't like to tossed around too much.) Finally, squeeze the lime juice in and stir one more time. 

The sooner you serve this after making it, the better. Enjoy, and come back tomorrow for my favorite Mexican dessert!
